Who's The Teacher?
This workshop will be facilitated by Niki Rodrigues and taught by Chef Simmone Edwin, whose love for the field of culinary arts began in 2006 when she enrolled in the then Trinidad and Tobago Hospitality and Tourism Institute to study Culinary Management. This love exponentially grew into a profound respect for the art of cuisine and she knew she had found her lifelong passion to create masterful works of art that would reflect the flavours and vibe of her homeland of Trinidad and Tobago.
She has added her value to establishments such as Il Colosseo, Buzo, More Vino Ltd, and Adam’s Bagels, but her true mark was undoubtably made while teaching Baking and Pastry Arts and Culinary Arts at TTHTI, where she won the Lecturer of the Year award three times. Her other accomplishments have included winning the Maggi Food Court competition in Jamaica in 2022 and reaching the finals of the unaired Caribbean CookUp competition in the Dominican Republic in 2021, among other great feats.
Chef Edwin has transitioned seamlessly into managing and operating her own Catering and Consultancy Company, Meraki Catering, which she started in 2017. The name Meraki signifies dedication to infusing heart, soul and passion into one's craft. Chef truly believes that the beauty of Trinidad and Tobago should always be on display and can be done at an artistic level through the medium of food.
